Campfire Cooking Recipes – Skewers

1 medium green bell pepper, cut into 1 “pieces
1 medium sweet red bell pepper, cut into 1 “pieces

Using 6 “long skewers, alternate chicken, pineapple, green bell peppers, and red bell peppers, leaving about 1/4” between each piece for basting. Place skewers on the rack of an uncovered grill directly over medium heat and grill for about 12-14 minutes or until no longer pink. Place over hot coals, flip, and brush with glaze for the last 5 minutes of broiling time to help prevent glaze from burning. If you are using wooden skewers instead of metal, it is best if you dip them in water before grilling or they could catch fire. You should soak them in water for about twenty minutes before using them.

Roasting sweet corn over the campfire

You will need about 6 ears of sweet corn with leaves, peel the husks from the corn but do not remove them. Clean all the silk from the corn and rinse, sprinkle with salt and pepper. Wrap corn in corn husk and tie with damp kitchen twine. Place on a wire rack over the heat but not where it will burn and turn slowly and roast the cobs on all sides for about 25-30 minutes. You should start with the sweet corn first before the kabobs.
